please have a look at

/sys/ethercat/master0/slave002/info

if the PDOs are mapped. Unfortunately, the newer EL2004 slaves have
their output data on different addresses (0x7000).

A second reason could be, that the slave has incomplete EEPROM contents,
so first have a look.
